- 1 lb hot Italian sausage, casing removed
- 1 tablespoon olive oil (if needed)
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 12 oz beer (lager or pale ale preferred)
- 8 oz cream cheese, softened
- 2 cups shredded cheddar cheese
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground mustard
- Salt and pepper to taste
- Fresh chives or green onions, chopped, for garnish
Instructions
- Cook sausage in a skillet over medium heat until browned, breaking it into crumbles. Drain excess fat.
- If the skillet is dry, add olive oil and sauté onion and garlic until softened.
- Pour in beer and bring to a simmer, scraping the skillet to deglaze. Cook for 2-3 minutes.
- Lower heat to medium-low, stir in cream cheese until melted.
- Gradually add cheddar cheese, stirring constantly until smooth.
- Mix in smoked paprika, ground mustard, salt, and pepper. Return sausage to the skillet and combine.
- Garnish with chives or green onions. Serve warm with chips, pretzels, or veggies.

- Substitute beer with chicken or vegetable broth for an alcohol-free version.
- Use mild sausage for a less spicy dip.
