Instructions

  1. In a skillet over medium heat, stir together walnuts, sugar, and water until the sugar dissolves and coats the walnuts. Cool on parchment paper.
  2. Season shrimp with salt and pepper, then coat with cornstarch. Dip in egg white, then dredge again in cornstarch.
  3. Heat oil in a skillet or wok to 350–375°F. Fry shrimp in batches for 2–3 minutes per side until golden. Drain on paper towels.
  4. In a bowl, whisk together mayonnaise, honey, condensed milk, and lemon juice until smooth.
  5. Toss the fried shrimp in the sauce and gently fold in the candied walnuts. Serve immediately.
