- 4 boneless, skinless chicken breasts
- 1.5 lbs baby potatoes, halved
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- For Garnish
- Fresh parsley, chopped
- Extra Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Arrange chicken breasts on one side of the baking sheet and baby potatoes on the other.
- In a bowl, whisk olive oil, garlic, Parmesan cheese, Italian seasoning, paprika, salt, and black pepper.
- Drizzle half the mixture over the chicken and the rest over the potatoes. Toss the potatoes to coat evenly.
- Bake for 30-35 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
- Garnish with parsley and extra Parmesan before serving.
Notes
- For crispier potatoes, broil for 2-3 minutes after baking.
- Swap baby potatoes with sweet potatoes or Yukon Gold for variety.
