Ingredients
Scale
- 2 lbs ground pork
- 1 medium onion, finely minced
- 1 medium carrot, finely minced
- 6 cloves garlic, finely minced
- 8oz can water chestnuts, finely minced
- 1 teaspoon freshly ground black pepper
- 3 1/2 tablespoons oyster sauce (or soy sauce if oyster sauce is unavailable)
- 1 egg
- 2 packages lumpia wrappers (or spring roll wrappers), thawed
- Vegetable oil, for frying
Optional
- Sweet Chili Sauce, for dipping
Instructions
- Prepare the Filling:
- In a large bowl, combine the ground pork, onion, carrot, garlic, water chestnuts, black pepper, oyster sauce, and egg.
- Mix thoroughly using your hands to ensure even distribution of ingredients.
- Wrap the Lumpias:
- Place a wrapper on a clean, flat surface.
- Spoon about 1 1/2 to 2 tablespoons of the filling onto the lower third of the wrapper, spreading it out evenly but leaving a small margin on each side.
- Moisten the edges of the wrapper by dipping your fingers in water and dabbing the edges lightly.
- Fold the bottom part of the wrapper over the filling, then fold in the sides and roll tightly towards the top. Seal the final edge with a bit of water to keep it closed.
- Frying the Lumpias:
- Heat half an inch of vegetable oil in a frying pan or skillet over medium-high heat until very hot.
- Fry the lumpias in batches, turning once, until golden brown, about 4 minutes per side.
- Drain on paper towels.
- Serving:
- Serve the lumpias hot with sweet chili sauce for dipping.
Notes
- The oyster sauce adds a unique depth of flavor, but soy sauce can be used as a substitute.
- Lumpias are ideal for freezing. Place them in a single layer separated by wax paper in airtight containers.
- When frying frozen lumpias, be cautious as ice crystals can cause oil to splatter. Use a cover to prevent oil burns.
