Instructions

  1. Prepare the Filling:
    • In a large bowl, combine the ground pork, onion, carrot, garlic, water chestnuts, black pepper, oyster sauce, and egg.
    • Mix thoroughly using your hands to ensure even distribution of ingredients.
  2. Wrap the Lumpias:
    • Place a wrapper on a clean, flat surface.
    • Spoon about 1 1/2 to 2 tablespoons of the filling onto the lower third of the wrapper, spreading it out evenly but leaving a small margin on each side.
    • Moisten the edges of the wrapper by dipping your fingers in water and dabbing the edges lightly.
    • Fold the bottom part of the wrapper over the filling, then fold in the sides and roll tightly towards the top. Seal the final edge with a bit of water to keep it closed.
  3. Frying the Lumpias:
    • Heat half an inch of vegetable oil in a frying pan or skillet over medium-high heat until very hot.
    • Fry the lumpias in batches, turning once, until golden brown, about 4 minutes per side.
    • Drain on paper towels.
  4. Serving:
    • Serve the lumpias hot with sweet chili sauce for dipping.
