- 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
- 1½ cups fresh pineapple chunks (or canned, drained)
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- ½ red onion, sliced
- 2 cups broccoli florets
- ¼ cup teriyaki sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- ½ teaspoon ginger powder
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- 2 tablespoons chopped green onions, for garnish
- 1 teaspoon sesame seeds, optional
Instructions
- Preheat oven to 400°F (200°C) or heat grill to medium heat.
- Whisk together teriyaki sauce, soy sauce, honey, garlic powder, and ginger powder.
- Add chicken to marinade and let sit for 10 minutes.
- Prep vegetables and cut pineapple.
- Lay out 4 sheets of foil and divide ingredients evenly.
- Drizzle with olive oil and remaining sauce. Season with salt and pepper.
- Fold and seal the foil packets tightly.
- Bake for 20–25 minutes or grill for 15–20 minutes, flipping halfway.
- Open packets carefully. Garnish with green onions and sesame seeds.
- Serve directly in foil or over rice/quinoa.

- Canned pineapple is fine—just drain well.
