- 2½ cups milk
- 1 Tbs. white vinegar

- ½ stick butter, melted
For the Icing:
- ½ cup cream cheese, softened
- 1 cup confectioners sugar
- ¼ cup real maple syrup
- Pinch of salt
For the Topping:
- 1 pound bacon, cooked crisp and finely chopped
- Real maple syrup
Instructions
- Preheat the Oven:
- Preheat your oven to 425 degrees Fahrenheit.
- Mix Dry Ingredients:
- In a large bowl, combine 3 cups of flour, ¼ cup of sugar, ½ tsp of salt, and 1 Tbs of baking powder. Mix these ingredients well and set the bowl aside.
- Combine Wet Ingredients:
- In a smaller bowl, add 2½ cups of milk and 1 Tbs of white vinegar. Stir these together and let them sit for a minute to create a makeshift buttermilk.
- Whisk in 2 tsp of vanilla extract, 2 eggs, and ½ stick of melted butter into the milk mixture until everything is well combined.
- Mix Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients. Mix everything together until you have a smooth batter.
- Prepare the Muffin Pans:
- Grease or spray two mini muffin baking pans. Fill each muffin cup about ⅔ full with the batter.
- Bake the Muffins:
- Place the pans in the oven and bake for 9-12 minutes, or until the tops of the muffins are lightly golden brown.
- Make the Icing:
- While the muffins are baking, prepare the icing by whisking together ½ cup of softened cream cheese, 1 cup of confectioners sugar, ¼ cup of maple syrup, and a pinch of salt in a small bowl until smooth.
- Assemble the Muffins:
- Once the muffins are baked and cool enough to handle, dip the tops into the cream cheese icing, and then roll them in the finely chopped cooked bacon.
- Serve:
