  • ½ stick butter, melted

For the Icing:

  • ½ cup cream cheese, softened
  • 1 cup confectioners sugar
  • ¼ cup real maple syrup
  • Pinch of salt

For the Topping:

  • 1 pound bacon, cooked crisp and finely chopped
  • Real maple syrup

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 425 degrees Fahrenheit.
  2. Mix Dry Ingredients:
    • In a large bowl, combine 3 cups of flour, ¼ cup of sugar, ½ tsp of salt, and 1 Tbs of baking powder. Mix these ingredients well and set the bowl aside.
  3. Combine Wet Ingredients:
    • In a smaller bowl, add 2½ cups of milk and 1 Tbs of white vinegar. Stir these together and let them sit for a minute to create a makeshift buttermilk.
    • Whisk in 2 tsp of vanilla extract, 2 eggs, and ½ stick of melted butter into the milk mixture until everything is well combined.
  4. Mix Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients. Mix everything together until you have a smooth batter.
  5. Prepare the Muffin Pans:
    • Grease or spray two mini muffin baking pans. Fill each muffin cup about ⅔ full with the batter.
  6. Bake the Muffins:
    • Place the pans in the oven and bake for 9-12 minutes, or until the tops of the muffins are lightly golden brown.
  7. Make the Icing:
    • While the muffins are baking, prepare the icing by whisking together ½ cup of softened cream cheese, 1 cup of confectioners sugar, ¼ cup of maple syrup, and a pinch of salt in a small bowl until smooth.
