- 6 chicken breasts (about 4 oz each)
- ¼ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- 2 tablespoons light butter (canola oil-based)
- 1 small yellow onion, thinly sliced
- 1 (10-ounce) can of French onion soup
- ½ cup reduced-fat mozzarella cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, melt butter. Add sliced onion, sauté until golden and translucent. Remove and set aside.
- Season chicken with paprika, garlic powder, and salt.
- Brown chicken in skillet over medium-high heat, about 5 minutes per side.
- Return onions to the skillet, pour in French onion soup, and simmer for 5 minutes to reduce slightly.
- If using a cast iron skillet, sprinkle mozzarella over the chicken and move the skillet to the oven. Otherwise, transfer everything to a baking dish and top with cheese.
- Bake for 15–20 minutes until cheese is bubbly and lightly golden on edges.
