Ingredients

  • 6 chicken breasts (about 4 oz each)
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 tablespoons light butter (canola oil-based)
  • 1 small yellow onion, thinly sliced
  • 1 (10-ounce) can of French onion soup
  • ½ cup reduced-fat mozzarella cheese


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, melt butter. Add sliced onion, sauté until golden and translucent. Remove and set aside.
  3. Season chicken with paprika, garlic powder, and salt.
  4. Brown chicken in skillet over medium-high heat, about 5 minutes per side.
  5. Return onions to the skillet, pour in French onion soup, and simmer for 5 minutes to reduce slightly.
  6. If using a cast iron skillet, sprinkle mozzarella over the chicken and move the skillet to the oven. Otherwise, transfer everything to a baking dish and top with cheese.
  7. Bake for 15–20 minutes until cheese is bubbly and lightly golden on edges.
