Instructions
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and smoked paprika.
- Prepare Wet Ingredients: In a separate bowl, beat the egg and stir in the milk until well combined.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but smooth.
- Add Corn and Other Ingredients: Fold in the corn kernels, green onions, and cheddar cheese (if using) until evenly distributed.
- Heat Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Fry the Fritters: Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Drain Excess Oil: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
