This Crockpot Loaded Steak and Potato Bake is an easy, hearty, one-pot comfort meal made with tender steak, creamy potatoes, melted cheese, and crispy bacon — slow-cooked to perfection. Perfect for cozy dinners or weeknight family meals.

- 1 tsp black pepper
- 1 tsp smoked paprika
- 2 lbs steak (sirloin, ribeye, or flank), cut into bite-sized pieces
- 2 lbs baby potatoes, halved
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ cup beef broth
- ½ cup sour cream (optional, for serving)
- 2 green onions, sliced (for garnish)
Instructions
- Prepare the ingredients by cutting the steak into bite-sized pieces, halving the potatoes, dicing the onion, and mincing the garlic.
- Add the steak, potatoes, onion, and garlic to the crockpot. Drizzle with olive oil, season with salt, pepper, smoked paprika, garlic powder, and onion powder. Stir to coat evenly.
- Pour in the beef broth and cover. Cook on LOW for 6–8 hours or HIGH for 3–4 hours until steak is tender and potatoes are soft.
- About 15 minutes before serving, sprinkle cheddar cheese and bacon on top. Cover and let the cheese melt.
- Garnish with green onions and serve with sour cream on the side.
Notes
- Add a pinch of red pepper flakes or cayenne pepper for a spicy kick.
- Swap cheddar for mozzarella, pepper jack, or Colby Jack for a twist.
- Make it extra creamy by stirring in ranch dressing or sour cream before serving.
