Description

This Crockpot Loaded Steak and Potato Bake is an easy, hearty, one-pot comfort meal made with tender steak, creamy potatoes, melted cheese, and crispy bacon — slow-cooked to perfection. Perfect for cozy dinners or weeknight family meals.

Ingredients

Scale
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 2 lbs steak (sirloin, ribeye, or flank), cut into bite-sized pieces
  • 2 lbs baby potatoes, halved
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup beef broth
  • ½ cup sour cream (optional, for serving)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Prepare the ingredients by cutting the steak into bite-sized pieces, halving the potatoes, dicing the onion, and mincing the garlic.
  2. Add the steak, potatoes, onion, and garlic to the crockpot. Drizzle with olive oil, season with salt, pepper, smoked paprika, garlic powder, and onion powder. Stir to coat evenly.
  3. Pour in the beef broth and cover. Cook on LOW for 6–8 hours or HIGH for 3–4 hours until steak is tender and potatoes are soft.
  4. About 15 minutes before serving, sprinkle cheddar cheese and bacon on top. Cover and let the cheese melt.
  5. Garnish with green onions and serve with sour cream on the side.

Notes

  • Add a pinch of red pepper flakes or cayenne pepper for a spicy kick.
  • Swap cheddar for mozzarella, pepper jack, or Colby Jack for a twist.
  • Make it extra creamy by stirring in ranch dressing or sour cream before serving.
