Description

A comforting slow cooker casserole layering thin beef, diced potatoes, peppers, onions and melted provolone for an easy, hearty dinner.


Ingredients

  • 1 ½ lbs thinly sliced beef steak (ribeye or sirloin)
  • 6 medium russet potatoes, peeled & diced
  • 1 large green bell pepper, chopped
  • 1 large onion, sliced
  • 2 cups shredded provolone cheese
  • 1 ½ cups beef broth
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in skillet over medium-high heat; sear beef slices 2-3 minutes until lightly browned. Remove and set aside.
  2. Layer diced potatoes in bottom of crockpot and season with salt, black pepper, garlic powder & smoked paprika.
  3. Add sliced onion and chopped bell pepper evenly over potatoes.
  4. Place seared beef slices on top of vegetables.
  5. Pour beef broth gently over all layers so moisture distributes.
  6. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are fork-tender.
  7. Sprinkle shredded provolone on top; re-cover and let melt 10–15 minutes.
  8. Garnish with chopped parsley, let rest 5–10 minutes, then serve warm.

Notes

  • Use freshly shredded provolone for best melt and texture.
  • Don’t overcrowd the skillet when searing — do in batches to get good browning.
  • Cut potatoes evenly so they cook uniformly.
  • If potatoes are still firm near the end, switch to HIGH or extend cooking.
  • For a crispier top, remove lid near the end or broil if using an oven-safe dish.
  • Drain excess fat from beef if mixture is greasy before layering.
  • Let casserole rest 5–10 minutes before serving to allow juices to settle.
