Golden, crispy corn fritters bursting with sweet corn flavor, paired with a tangy, creamy cilantro sauce. Perfect as a snack, appetizer, or vegetarian meal.
Ingredients
For the fritters:

2 cups fresh or thawed frozen corn kernels

2 eggs

½ cup all-purpose flour

¼ cup cornmeal

½ tsp baking powder

½ tsp salt

¼ tsp black pepper

¼ tsp smoked paprika

¼ cup scallions, finely chopped

¼ cup fresh cilantro, chopped

¼ cup grated cheese (cheddar or cotija, optional)

2–3 tbsp milk (for batter consistency)

Olive oil or neutral oil (for frying)
For the cilantro cream:

½ cup sour cream or Greek yogurt

¼ cup fresh cilantro, chopped

1 tbsp lime juice

1 garlic clove, minced

Salt to taste
Instructions

In a bowl, mix corn, eggs, flour, cornmeal, baking powder, salt, pepper, paprika, scallions, cilantro, and cheese.

Add milk as needed for a scoopable batter.

Heat oil in a skillet over medium heat. Drop 2 tbsp batter per fritter, flatten gently. Cook 2–3 mins per side until golden.

Blend cilantro cream ingredients until smooth. Serve fritters warm with sauce.
