Description

Crème Brûlée French Toast combines rich custard-soaked brioche with a crisp caramelized sugar topping, perfect for brunch or special mornings.

Ingredients

Scale
  • 1 1/4 cups heavy cream
  • 1/2 cup whole milk
  • 1/3 cup granulated sugar
  • 1 loaf brioche or challah bread, sliced thick
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • For the Crème Brûlée Topping:
  • 1/2 cup granulated sugar
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Whisk eggs, cream, milk, sugar, vanilla, salt, and cinnamon in a large bowl until smooth.
  2. Dip each slice of brioche and let soak for 1–2 minutes per side.
  3. Heat skillet or griddle over medium, grease lightly with butter.
  4. Cook soaked bread 3–4 minutes per side until golden brown.
  5. Place on a parchment-lined baking sheet.
  6. Preheat broiler to high.
  7. Brush toast with melted butter and sprinkle sugar evenly on top.
  8. Broil for 1–2 minutes until sugar caramelizes. Watch closely!
  9. Cool slightly before serving to let the sugar harden.
  10. Serve with fresh berries, whipped cream, or maple syrup.

Notes

  • Use day-old brioche for best results.
  • Don’t skip the soaking—let the bread absorb fully.
  • A kitchen torch can help caramelize topping with precision.
  • Make ahead: soak overnight and broil just before serving.
