  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • 16 oz potato gnocchi
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Add the sausage, breaking it into small pieces, and cook until browned. Remove and set aside.
  • In the same pot, sauté the onion for 3-4 minutes until softened. Add garlic and cook for 1 minute.
  • Pour in chicken broth, diced tomatoes, heavy cream, Italian seasoning, and red pepper flakes. Return the cooked sausage to the pot and stir.
  • Bring to a gentle simmer, then add the gnocchi. Cook for 3-4 minutes until the gnocchi floats to the top.
  • Stir in the spinach and let it wilt for 1-2 minutes. Season with salt and pepper to taste.
