- 1 lb Italian sausage (mild or spicy)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
- 16 oz potato gnocchi
- 2 cups fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage, breaking it into small pieces, and cook until browned. Remove and set aside.
- In the same pot, sauté the onion for 3-4 minutes until softened. Add garlic and cook for 1 minute.
- Pour in chicken broth, diced tomatoes, heavy cream, Italian seasoning, and red pepper flakes. Return the cooked sausage to the pot and stir.
- Bring to a gentle simmer, then add the gnocchi. Cook for 3-4 minutes until the gnocchi floats to the top.
- Stir in the spinach and let it wilt for 1-2 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with Parmesan cheese.
