Ingredients

1 lb (450g) large shrimp, peeled & deveined

4 large potatoes, peeled & chunked

4 tbsp butter (divided)

1/2 cup heavy cream (mashed potatoes)

1/4 cup milk (mashed potatoes)

2 tbsp olive oil

4 garlic cloves, minced

1 cup heavy cream (sauce)

1/2 cup chicken broth
-
1/4 cup grated Parmesan cheese

Salt & pepper, to taste

Fresh parsley, chopped (garnish)
Instructions

Boil potatoes in salted water until fork-tender (15 min).

Mash with 2 tbsp butter, heavy cream, and milk until smooth. Season; keep warm.

Heat olive oil; cook shrimp 2–3 min per side. Remove.

Melt butter; sauté garlic for 1 min. Add cream & broth; simmer 3–4 min.

Stir in Parmesan until melted.

Return shrimp to skillet; coat in sauce.

Serve over mashed potatoes; garnish with parsley.
