- 3 lbs Yukon Gold potatoes, peeled and cut into chunks
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 4 oz cream cheese, softened
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (optional for garnish)
Instructions
- Place potato chunks into a large pot; cover with cold water. Add a pinch of salt.
- Bring to a boil over high heat, then reduce to medium heat. Simmer for 15–20 minutes or until fork-tender.
- Heat heavy cream and butter in a saucepan over low heat until warm (do not boil).
- Drain potatoes and mash until smooth.
- Mix in cream cheese, garlic, salt, and pepper. Gradually add the warm cream-butter mixture.
- Adjust seasoning to taste. Serve garnished with parsley if desired.
