- 1 pound cheese tortellini
- 2 cups cooked chicken, shredded
- 3 cups heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Instructions
- In a slow cooker, combine the shredded chicken, heavy cream, chicken broth, garlic powder, onion powder, black pepper, salt, nutmeg, and butter.
- Stir in chopped sun-dried tomatoes.
- Cover and cook on low for 2–3 hours or until heated through.
- 30 minutes before serving, add tortellini and spinach.
- Stir gently, then sprinkle in the Parmesan cheese.
- Cover and cook for another 20–25 minutes, or until tortellini is tender.
- Garnish with fresh parsley and additional Parmesan if desired. Serve hot.
Notes
- If using frozen tortellini, increase cook time by 5–10 minutes.
- Use rotisserie chicken for quicker prep.
- Fresh tortellini holds up better than frozen in the slow cooker.
- To lighten the dish, use half-and-half instead of heavy cream.
- For a vegetarian version, skip the chicken and add mushrooms.
