  • 2 medium zucchinis, sliced into half-moons

  • 1 lb boneless, skinless chicken breasts, diced

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ cup sour cream

  • ¼ cup mayonnaise

  • ½ tsp paprika

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 375°F (190°C).

  • In a large skillet, heat olive oil and sauté garlic until fragrant.

  • Add chicken, season, and cook until no longer pink.

  • Stir in zucchini and cook for 5 minutes.

  • In a bowl, mix sour cream, mayo, paprika, and half of each cheese.

  • Remove skillet from heat and stir in creamy mixture.

  • Transfer to a greased baking dish and top with remaining cheese.

  • Bake for 20–25 minutes until bubbly.

  • Broil for 2–3 minutes for a golden top.

  • Garnish with parsley and serve hot.
