Instructions

  1. Preheat the oven to 350°F and line baking pans with parchment paper.
  2. Pour lemon juice over chopped strawberries and let sit for a few minutes before draining.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Beat softened butter, cream cheese, and sugar until light and fluffy. Add the egg and vanilla extract and mix well.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the chopped white chocolate.
  7. Toss the strawberries with flour to coat and fold them gently into the batter.
  8. Drop heaping tablespoons of the batter onto the prepared baking pans.
  9. Chill the cookies in the refrigerator for 5-10 minutes before baking.
  10. Optionally sprinkle with sanding sugar.
  11. Bake for 13-15 minutes until the edges are golden brown.
  12. Let cool on the pans for a few minutes, then transfer to wire racks to cool completely.

  • For a gluten-free version, substitute the all-purpose flour with a gluten-free blend.
