Instructions
- Preheat the oven to 350°F and line baking pans with parchment paper.
- Pour lemon juice over chopped strawberries and let sit for a few minutes before draining.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Beat softened butter, cream cheese, and sugar until light and fluffy. Add the egg and vanilla extract and mix well.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the chopped white chocolate.
- Toss the strawberries with flour to coat and fold them gently into the batter.
- Drop heaping tablespoons of the batter onto the prepared baking pans.
- Chill the cookies in the refrigerator for 5-10 minutes before baking.
- Optionally sprinkle with sanding sugar.
- Bake for 13-15 minutes until the edges are golden brown.
- Let cool on the pans for a few minutes, then transfer to wire racks to cool completely.
Notes
- For a gluten-free version, substitute the all-purpose flour with a gluten-free blend.
- Ensure that the strawberries are not too wet after draining to avoid soggy cookies.
