Description

Ingredients

Scale
  • 2 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Cowboy Butter Sauce:

  • 6 tablespoons melted butter
  • 3 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped chives
  • 1 teaspoon chili flakes
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 425 °F (220 °C).
  2. Toss potatoes with olive oil, salt, and pepper. Spread onto a baking sheet.
  3. Roast for 30–35 minutes, flipping halfway, until golden and crispy.
  4. Meanwhile, whisk together melted butter, garlic, Dijon, lemon juice, smoked paprika, cayenne, parsley, chives, chili flakes, salt, and pepper.
  5. Remove potatoes from the oven and transfer to a serving bowl.
  6. Pour warm cowboy butter over the potatoes and toss until coated.
  7. Garnish with extra herbs and serve immediately.
