Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine crushed chocolate chip cookies with melted butter in a bowl. Press firmly into the bottom of a greased or parchment-lined springform pan.
  3. Bake crust for 8 minutes. Let cool while you prepare the filling.
  4. In a large bowl, beat cream cheese, granulated sugar and brown sugar until smooth and creamy.
  5. Add eggs one at a time, mixing on low speed after each addition.
  6. Stir in vanilla extract and sour cream.
  7. Fold in the mini chocolate chips gently.
  8. Pour the cheesecake mixture over the crust and smooth the top.
  9. Bake for 45–50 minutes, or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven, crack the door open and let the cheesecake cool inside for 1 hour.
  11. Refrigerate for at least 4 hours (or overnight) before slicing.
  12. Before serving, add extra mini chocolate chips and crumbled cookies on top, if desired.
