- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup Kalamata olives, halved
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Dressing:
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Combine chickpeas, tomatoes, cucumber, red onion, olives, and parsley in a large mixing bowl.
- In a small bowl, whisk olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Add crumbled feta cheese and lightly toss again.
- Serve immediately or refrigerate for 15–20 minutes to enhance the flavors.

- For a vegan version, substitute feta with vegan cheese or omit it.
