Description
These Cherry Cheesecake Brownies are fudgy, rich brownie squares topped with a creamy cheesecake layer and sweet cherry pie swirls. They’re beautifully marbled, impressive enough for special occasions, but simple to prepare at home.
Ingredients
Brownie Layer:
-
1 cup unsalted butter, melted
-
1 ½ cups granulated sugar
-
1 cup brown sugar
-
4 large eggs
-
1 tablespoon vanilla extract
-
1 cup unsweetened cocoa powder
-
1 cup all-purpose flour
-
½ teaspoon salt
Cheesecake Layer:
-
8 oz cream cheese, softened
-
⅓ cup granulated sugar
-
1 large egg
-
1 teaspoon vanilla extract
Topping:
-
1 cup cherry pie filling
Instructions
-
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper and grease lightly.
-
In a large bowl, whisk melted butter with granulated and brown sugar until smooth.
-
Add eggs, one at a time, beating after each. Stir in vanilla extract.
-
Sift in cocoa powder, flour, and salt. Fold gently until just combined — do not overmix.
-
Spread about ¾ of batter evenly in pan.
-
In a separate bowl, beat cream cheese, sugar, egg, and vanilla until creamy.
-
Spread cheesecake mixture over brownie layer.
-
Spoon cherry pie filling over the cheesecake layer.
-
Drop remaining brownie batter on top in spoonfuls. Gently swirl with a knife for marbled effect.
-
Bake 35–40 minutes, until center is just set.
-
Cool completely, then slice into squares.
Notes
-
Be patient cooling — it helps layers set cleanly.
-
Use room temperature ingredients for smooth cheesecake texture.
-
A slight jiggle in center is perfect — avoid overbaking.
