  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Sour cream and sliced jalapeños (optional for serving)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess grease if needed.
  2. Add diced onion and garlic. Sauté for 2-3 minutes until softened.
  3. Stir in taco seasoning and coat beef evenly.
  4. Add rice, beef broth, black beans, corn, and diced tomatoes. Mix well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
  6. Uncover and top with shredded cheese. Cover again for 2-3 minutes to melt cheese.
  7. Garnish with cilantro, sour cream, and jalapeños. Serve hot.
