  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 cup mozzarella or cheddar cheese cubes
  • 1/4 cup ketchup or BBQ sauce (for topping)
  • Fresh parsley, chopped (optional garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and Italian seasoning. Mix gently until just combined.
  3. Scoop about 2 tablespoons of the meat mixture and flatten slightly.
  4. Place a cheese cube in the center and wrap the meat around it, sealing completely to form a ball.
  5. Arrange meatloaf bites on the prepared baking sheet.
  6. Spoon ketchup or BBQ sauce on top of each bite.
  7. Bake for 18–22 minutes or until fully cooked and lightly browned.
  8. Optional: Broil for 2 minutes for a caramelized top.
  9. Let rest 5 minutes before serving. Garnish with parsley.
