- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 1/4 cup ketchup
- 1 tablespoon yellow mustard
- 8 oz elbow macaroni
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup heavy cream
- 2 tablespoons cream cheese
- 1/4 cup diced pickles (optional)
- Chopped parsley or green onions for garnish
Instructions
- In a large skillet or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease.
- Add diced onion and minced garlic; sauté until softened, about 2-3 minutes.
- Stir in beef broth, diced tomatoes (with juice), ketchup, mustard, salt, pepper, and paprika. Bring to a simmer.
- Add uncooked macaroni, stir to combine. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and liquid is absorbed.
- Reduce heat to low and stir in heavy cream, cream cheese, and shredded cheddar until smooth and creamy.
- Remove from heat and let sit for a few minutes to thicken.
- Serve hot, garnished with diced pickles and fresh herbs.
