Description
This one-pan cheese tortellini and sausage skillet is a quick and satisfying meal loaded with Italian sausage, creamy sauce, spinach, and bold flavors.

- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 lb (450g) cheese tortellini (fresh or frozen)
- 1 lb (450g) Italian sausage (mild or spicy)
- 1 red bell pepper, diced
- 1 cup spinach, chopped
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- Grated Parmesan cheese for garnish (optional)
Instructions
- Heat a large skillet over medium heat and add the olive oil.
- Remove sausage casing and crumble sausage into the skillet. Cook for 5–7 minutes until browned.
- Add onion and garlic. Sauté for 2–3 minutes until softened.
- Stir in diced red bell pepper and cook for another 3–4 minutes.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Meanwhile, cook tortellini according to package instructions. Drain and set aside.
- Stir in chicken broth, heavy cream, red pepper flakes, salt, and pepper. Simmer for 2–3 minutes.
- Add cooked tortellini and toss to coat. Simmer for another 3–4 minutes to blend flavors.
- Top with Parmesan cheese if desired and serve hot.
Notes
- Use fresh or frozen tortellini—both work well.
- Omit red pepper flakes if you prefer a milder dish.
- Add mushrooms or sun-dried tomatoes for more depth.
