Description

A comforting, family-friendly bacon-wrapped meatloaf stuffed with melty cheddar cheese — hearty, easy to make, and full of flavor.

  • 1 teaspoon garlic powder → savoury depth
  • 1 teaspoon onion powder → rounds the flavour
  • 1 teaspoon Worcestershire sauce → umami richness
  • 1 cup shredded cheddar cheese → melty, gooey centre
  • 8-10 slices bacon → wraps loaf in smoky crunch and keeps it juicy


Instructions

  1. Preheat the oven to 375 °F (190 °C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, milk, salt, black pepper, garlic powder, onion powder and Worcestershire sauce. Mix gently until just combined.
  3. Flatten the meat mixture into a rectangle on the prepared parchment sheet.
  4. Sprinkle the shredded cheddar cheese evenly in the centre of the rectangle, leaving about an inch of meat mixture around the edges.
  5. Carefully roll the meat mixture tightly around the cheese, pressing the edges to seal so the cheese stays inside.
  6. Wrap the bacon slices around the loaf, tucking the ends underneath so they stay in place during baking.
  7. Place the wrapped meatloaf on the prepared baking sheet. Bake for 45-50 minutes or until bacon is crispy and internal temperature reaches 160 °F (71 °C).
  8. Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • Make sure cheese is fully enclosed to prevent leaking.
  • If using thick-cut bacon, you may need a few extra minutes for crispness — monitor internal temp.
