  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup barbecue sauce
  • 4 slices of your choice of bread
  • 4 slices cheddar cheese
  • 4 pineapple rings (fresh or canned)
  • 2 tablespoons butter, softened

Instructions

  1. Season the chicken breasts with salt and pepper. Grill or cook them in a skillet over medium heat until fully cooked.
  2. Brush the cooked chicken breasts with barbecue sauce and set them aside.
  3. Spread softened butter on one side of each slice of bread.
  4. Place a slice of cheddar cheese on the unbuttered side of two bread slices.
  5. Top each cheese slice with a grilled chicken breast.
  6. Place two pineapple rings on top of each chicken breast, then drizzle with additional barbecue sauce if desired.
  7. Top each sandwich with another slice of cheddar cheese and the remaining bread slices, buttered side facing out.
  8. Heat a skillet or griddle over medium heat and place the assembled sandwiches in the skillet.
  9. Cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  10. Remove from the skillet, slice in half if desired, and serve immediately.
