- 2 boneless skinless chicken breasts
- 1 cup sweet and spicy BBQ sauce, divided
- 8 slices thick-sliced bread, such as sourdough
- 2 cups extra sharp cheddar cheese, grated on the largest setting
- 12 thinly sliced pineapple strips (canned pineapple, sliced thinly, is also an option)
- Butter, for spreading
- Nonstick spray, for cooking
Instructions
For the Chicken:
- Preheat the oven to 350 degrees F. Place the chicken breasts in an oven-safe baking dish.
- Spread ½ cup of BBQ sauce over the chicken, ensuring it’s well coated. Bake for 20 minutes, or until the chicken is thoroughly cooked.
- Remove from the oven, shred the chicken with two forks, then mix it with the remaining ½ cup of BBQ sauce in a large bowl until evenly coated.
For the Sandwiches:
- Butter one side of each bread slice. Lay the slices out, butter side down.
- On 4 slices, spread ¼ cup of cheese, followed by a quarter of the chicken mixture on each.
- Add 3 pineapple slices on top of the chicken, then top with another ¼ cup of cheese.
- Cover with the remaining bread slices, butter side out, and press down gently.
- Heat a skillet or grill pan over medium heat and lightly spray with nonstick spray.
- Cook the sandwiches (butter side down first) for 3-4 minutes until browned, then flip and cook for another 1-2 minutes. Watch closely to prevent burning.
- Repeat with the remaining sandwiches. Serve immediately, cut in half.

- For a spicier version, add sliced jalapeños.
