  • 2 boneless skinless chicken breasts
  • 1 cup sweet and spicy BBQ sauce, divided
  • 8 slices thick-sliced bread, such as sourdough
  • 2 cups extra sharp cheddar cheese, grated on the largest setting
  • 12 thinly sliced pineapple strips (canned pineapple, sliced thinly, is also an option)
  • Butter, for spreading
  • Nonstick spray, for cooking

Instructions

For the Chicken:

  1. Preheat the oven to 350 degrees F. Place the chicken breasts in an oven-safe baking dish.
  2. Spread ½ cup of BBQ sauce over the chicken, ensuring it’s well coated. Bake for 20 minutes, or until the chicken is thoroughly cooked.
  3. Remove from the oven, shred the chicken with two forks, then mix it with the remaining ½ cup of BBQ sauce in a large bowl until evenly coated.

For the Sandwiches:

  1. Butter one side of each bread slice. Lay the slices out, butter side down.
  2. On 4 slices, spread ¼ cup of cheese, followed by a quarter of the chicken mixture on each.
  3. Add 3 pineapple slices on top of the chicken, then top with another ¼ cup of cheese.
  4. Cover with the remaining bread slices, butter side out, and press down gently.
  5. Heat a skillet or grill pan over medium heat and lightly spray with nonstick spray.
  6. Cook the sandwiches (butter side down first) for 3-4 minutes until browned, then flip and cook for another 1-2 minutes. Watch closely to prevent burning.
  7. Repeat with the remaining sandwiches. Serve immediately, cut in half.
