Description

Ingredients

  • pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup bang bang sauce, divided
  • 2 tablespoons sesame oil, divided
  • 4 large eggs, beaten
  • ½ teaspoon kosher salt (for eggs)
  • 2 large carrots, diced
  • 1 large white onion, diced
  • ¼ cup green onions, diced, plus more for garnish
  • 1 teaspoon garlic, minced
  • 4 cups long-grain white rice, cooked and cooled (preferably day-old)
  • ¼ cup unsalted butter, melted
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons soy sauce
  • ⅓ cup frozen peas


Instructions

  1. Preheat air fryer to 400°F. Toss chicken with oil, paprika, garlic powder, salt, and pepper.
  2. Air fry chicken in a single layer for 11–12 minutes, flipping halfway through.
  3. Heat 1 tbsp sesame oil in a skillet. Scramble eggs with salt until just set. Remove and set aside.
  4. Add remaining sesame oil, carrots, onion, and green onions. Sauté for 5 minutes. Add garlic and cook for 1 more minute.
  5. Add rice to the skillet. Break up clumps and stir-fry for 2–3 minutes until slightly crispy.
  6. Stir in scrambled eggs, melted butter, lemon juice, soy sauce, and frozen peas. Cook for 2–3 more minutes.
  7. Toss cooked chicken with ½ cup bang bang sauce until fully coated.
  8. Top fried rice with bang bang chicken. Drizzle extra sauce and garnish with green onions.

  • Store-bought bang bang sauce works perfectly for convenience.
