A bold and delicious fried rice dish featuring crispy air-fried chicken, fluffy eggs, vegetables, and a spicy-sweet bang bang sauce.

- 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 cup bang bang sauce, divided
- 2 tablespoons sesame oil, divided
- 4 large eggs, beaten
- ½ teaspoon kosher salt (for eggs)
- 2 large carrots, diced
- 1 large white onion, diced
- ¼ cup green onions, diced, plus more for garnish
- 1 teaspoon garlic, minced
- 4 cups long-grain white rice, cooked and cooled (preferably day-old)
- ¼ cup unsalted butter, melted
- 1 teaspoon fresh lemon juice
- 2 tablespoons soy sauce
- ⅓ cup frozen peas
Instructions
- Preheat air fryer to 400°F. Toss chicken with oil, paprika, garlic powder, salt, and pepper.
- Air fry chicken in a single layer for 11–12 minutes, flipping halfway through.
- Heat 1 tbsp sesame oil in a skillet. Scramble eggs with salt until just set. Remove and set aside.
- Add remaining sesame oil, carrots, onion, and green onions. Sauté for 5 minutes. Add garlic and cook for 1 more minute.
- Add rice to the skillet. Break up clumps and stir-fry for 2–3 minutes until slightly crispy.
- Stir in scrambled eggs, melted butter, lemon juice, soy sauce, and frozen peas. Cook for 2–3 more minutes.
- Toss cooked chicken with ½ cup bang bang sauce until fully coated.
- Top fried rice with bang bang chicken. Drizzle extra sauce and garnish with green onions.
Notes
- Use day-old rice for the best fried rice texture.
- Store-bought bang bang sauce works perfectly for convenience.
- You can substitute tofu or chickpeas for a vegetarian option.
- Control spice level by adjusting sriracha in the sauce.
