- 2 cups vanilla wafer crumbs
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1/2 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- 1 cup whipped topping or whipped cream
- 1 banana, sliced (for topping)
- Extra vanilla wafers (for garnish)
Instructions
- Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
- Mix vanilla wafer crumbs with melted butter and press firmly into the bottom of the pan. Chill for 10 minutes.
- Beat cream cheese until smooth and creamy.
- Add sugar and mix until fully incorporated.
- Blend in mashed bananas, sour cream, and vanilla extract.
- Add eggs one at a time, mixing on low speed just until combined.
- Gently mix in flour until smooth.
- Pour batter over the crust and smooth the top.
- Bake for 60–70 minutes until the center is just set.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Top with whipped cream, banana slices, and vanilla wafers before serving.
Notes
- Use very ripe bananas for the best flavor.
- All ingredients should be at room temperature.
- Avoid overmixing eggs to prevent cracks.
- Chilling overnight gives the cleanest slices.
