- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 red onion, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- Wooden skewers, soaked in water for 30 minutes
Notes
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
- Add chicken chunks to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Preheat grill to medium-high heat.
- Thread marinated chicken onto skewers, alternating with pieces of red onion and bell pepper.
